Guess what?! I've now been a registered dietitian nutritionist for more than a year. It's crazy to think how quickly the time has gone by. I'm so thrilled I made this decision to become an RDN, because I get to do what I love and I get to talk to awesome people like you!
Part of what I love about being an RDN is spending time in the kitchen creating healthy, yummy recipes. I've been really into super-quick snack recipes lately. I'm talking the ready-in-five-minutes-or-less kind. So I recently got experimenting in my kitchen and created my Almond Cocoa Pistachio Bites energy balls, which offer a good dose of protein and fiber and can easily be eaten on the go.
Amy's Recipe of the Week: Creamy Carrot Cauliflower Soup
This time of year, a bowl of soup is super soothing, especially one that provides a cup of veggies. The best part: My soup is creamy without the cream! (And try more of my healthy recipes!)
How I Passed My RD Exam
This past year has gone by so fast, and I've had the best time helping clients become healthier, writing nutrition-focused stories for lots of publications (including Dr. Oz the Good Life, Women's Health, and more), starting a blog and a media coaching business, and creating lots of yummy recipes. To do all of that, I had to first become an RDN, so find out how I passed my exam!
