Guess what?! I've now been a registered dietitian nutritionist for more than a year.
It's crazy to think how quickly the time has gone by. I'm so thrilled I made this decision to become an RDN, because I get to do what I love and I get to talk to awesome people like you!
Part of what I love about being an RDN is spending time in the kitchen creating healthy, yummy recipes. I've been really into super-quick snack recipes lately. I'm talking the ready-in-five-minutes-or-less kind. So I recently got experimenting in my kitchen and created my Almond Cocoa Pistachio Bites energy balls, which offer a good dose of protein and fiber and can easily be eaten on the go.
The Best Low-Carb DIY Protein Balls
Because of my love of the DIY quick-snack trend, I was excited when MensFitness.com asked me for my Almond Cocoa Pistachio Bites recipe. Snag it and seven others, and you'll have plenty of energizing snacks for the week!
Amy's Recipe of the Week: Creamy Carrot Cauliflower Soup
This time of year, a bowl of soup is super soothing, especially one that provides a cup of veggies. The best part: My soup is creamy without the cream! (And try more of my healthy recipes!)
How I Passed My RD Exam
This past year has gone by so fast, and I've had the best time helping clients become healthier, writing nutrition-focused stories for lots of publications (including Dr. Oz the Good Life, Women's Health, and more), starting a blog and a media coaching business, and creating lots of yummy recipes. To do all of that, I had to first become an RDN, so find out how I passed my exam!
