Easy Roasted Butternut Squash

Here's an Easy Roasted Butternut Squash recipe for a healthy Meatless Monday! Sprinkle it with cinnamon or add it to a salad.



  • 4 cups butternut squash, cubed, peeled, and diced
  • 1 tsp olive oil
  • 1/2 tsp cinnamon
  • 1/8 tsp pumpkin pie spice




Preheat oven to 350° F.
Place squash and place on a nonstick spray. Drizzle with oil, and sprinkle with cinnamon and pumpkin pie spice. Cook for 30 minutes, turning halfway through.
