In a small bowl, whisk together egg, egg white, vanilla extract and 1/8 tsp. cinnamon. Dip bread into egg mixture, turning to evenly coat sides. Spray a large non-stick pan with oil; cook bread slices over medium heat until browned on both sides. Meanwhile, heat olive oil in a small nonstick pan. Saute grapes over medium-high heat, about 3 to 4 minutes, until they begin to soften. Top toast with grapes, pistachios, nutmeg, and remaining cinnamon. Serves 1.
