2 slices whole-wheat bread
1 large egg
1 large egg white
1/4 tsp. vanilla extract
1/4 tsp. cinnamon, divided
Olive oil spray
1/2 cup seedless grapes, halved
1 tsp. olive oil
1 1/2 Tbsp. pistachios, chopped
In a small bowl, whisk together egg, egg white, vanilla extract and 1/8 tsp. cinnamon. Dip bread into egg mixture, turning to evenly coat sides. Spray a large
non-stick pan with oil; cook bread slices over medium heat until browned on both sides. Meanwhile, heat olive oil in a small nonstick pan. Saute grapes over medium-high heat, about 3 to 4
minutes, until they begin to soften. Top toast with grapes, pistachios, nutmeg, and remaining cinnamon. Serves 1.
