Healthy French Toast with Pistachios & Grapes

Here's an easy recipe that's sure to be a classic! This French Toast with Pistachios and Sweet Grapes is healthy and one of the best.

Ingredients:

  • 2 slices whole-wheat bread
  • 1 large egg
  • 1 large egg white
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. cinnamon, divided
  • Olive oil spray
  • 1/2 cup seedless grapes, halved
  • 1 tsp. olive oil
  • 1 1/2 Tbsp. pistachios, chopped
  • Pinch nutmeg

 

Directions:

In a small bowl, whisk together egg, egg white, vanilla extract and 1/8 tsp. cinnamon. Dip bread into egg mixture, turning to evenly coat sides. Spray a large non-stick pan with oil; cook bread slices over medium heat until browned on both sides. Meanwhile, heat olive oil in a small nonstick pan. Saute grapes over medium-high heat, about 3 to 4 minutes, until they begin to soften. Top toast with grapes, pistachios, nutmeg, and remaining cinnamon. Serves 1.
